Every station must support the same promise: three mini pizzas, a complete personal meal and a box ready for delivery. Here is the core equipment proposed for the compact pilot.
01 / A CONNECTED KITCHEN
Follow the preparation.
Select a numbered station to read its role and allowance. The illustration explains the workflow; it is not a floor plan, scale drawing or exact vendor equipment rendering.

Pilot kitchen equipment envelope
26 priced references and allowances total THB 481,511, leaving THB 18,489 headroom. Building ventilation, electrical work and fit-out sit in the separate THB 850,000 premises allowance.
02 / MAIN EQUIPMENT
01
Mix & portion
A consistent base starts here.
The pilot initially prepares dough locally. A 20-litre spiral mixer, lidded dough boxes and digital scales support repeatable batches. The v2 recipe standard uses 58 g of raw dough per mini pizza. Dough rest, usable batch size and the actual rota still need confirmation.
THB 23,900 reference + 7% VAT reserve. Public supplier reference checked 10 September 2026.
02
Cold prep & toppings
Organise the choice before the rush.
A refrigerated prep counter holds the toppings close to the work surface. GN pans, labelled batches and portion tools help staff assemble three different recipes as one box. Twenty-seven proposed recipes increase the need to manage ingredients, allergens, spoilage and prep time.

Planning allowance. Dimensions, pan capacity and refrigeration specification need a supplier quote.
03
Bake & finish
Two ovens, with distinct roles to validate.
The budget includes both an SGE double-deck oven and a Piron convection oven. The E24 reference holds four 40 × 60 cm trays across two decks, with a stated 13.2 kW / 380 V supply. The Piron reference holds four 600 × 400 mm trays. Trials must establish pizza quality, heat recovery and the best use of each oven.
SGE uses the THB 38,900 upper list price of the range plus a VAT reserve; exact E24 quotation pending. Piron is THB 89,000 excluding VAT. Checked 10 September 2026. No measured throughput or five-minute order promise.
04
Prepare the sides
Give the whole meal its own workflow.
Two 16-litre electric fryer units are allowed for Fries, Bites and Wings. The team still needs to set food separation, oil handling and batch timing. Speedy Corn is roasted with butter, paprika and parmesan; it is not a fried product.
THB 6,900 per unit plus 7% VAT reserve. Public price reference checked 10 September 2026; stock and final model need confirmation.
05
Protect the cold chain
Storage is part of product quality.
The v2 references are a Hoshizaki cold cabinet and a Sanden chest freezer. Confirm temperature zones, usable volumes and the route from delivery to storage and prep. The Hoshizaki listing contains conflicting compartment descriptions, so exact refrigerator/freezer specifications need written confirmation.
v2 cost-book references dated 9–10 September 2026: THB 77,000 and 11,990 before the model’s 7% reserve. These are not supplier quotations.
06
Pack, check & hand over
Keep the three flavours in one clear order.
A separate packing surface supports the long black box, two dividers and final ticket check. POS, receipt or kitchen printing and a possible self-service kiosk need hardware, software and integration decisions. The THB 130k premises allowance groups counter, seating, signage, air conditioning and POS; it is not a stand-alone kiosk quotation.
The interactive screens on this site demonstrate the workflow. No POS vendor or payment integration has been contracted.
Before placing purchase orders
Confirm exact models, VAT on the actual invoice, simultaneous electrical load, ventilation, clearances, delivery, warranty and commissioning. Public list prices and the added VAT reserves are planning references. A quoted price may already include VAT; reconcile this before procurement.
03 / THE FIRST CENTRAL KITCHEN
Scale the bases. Keep the costs visible.
A THB 600,000 reserve is already included in the THB 4.5m plan. The first hub supplies raw dough bases after two additional outlets open: month 11 in the base scenario.
01Mix & portion
40 L mixer reference, scales and labelled batches
02Store chilled
Cold storage, food-safe containers and handling records
03Deliver raw bases

Three-base packs / month for hub EBITDA break-even
At base month-12 demand, the first hub has only about THB 496 monthly EBITDA. Across its two first-year operating months, it loses about THB 4,905 EBITDA. Centralisation supports consistency; it must also cover its own people, rent, cold delivery and capital costs.
